Eggs.

I found two brown duck eggs this morning. This means Wing Flap, S's Golden 300 Hybrid Layer, and Vladimir, Daddy's Khaki Campbell, are both laying. I'm still waiting for the day I get two non-brown eggs to know that both our Runner ducks are laying.

C said that if the green duck egg I found the other day was lain by Feather Head (his Fawn and White Runner duck) he would be so so happy.

I've been cooking with the duck eggs - usually mixing with chicken eggs if the recipe calls for more than one egg - and haven't noticed a significant difference in flavor. My new personal pet theory is that the main difference for folks eating a duck egg for the first time is they are comparing that flavor to a standard store bought chicken egg. There is already such a major difference in flavor between store bought and fresh chicken eggs (our eggs are much more flavorful), that I think, for us, the small difference between fresh chicken and fresh duck is not that noticeable.

Now goose eggs are another story. Speedy started laying in late February last year. We didn't try any of her eggs last year. Our neighbor says they taste very different, so this year we'll find out, since we plan on eating 90% of them. The kids want to leave a few for Speedy to try to sit and hatch. We'll wait till the end of her laying cycle to leave her to it.
