The other day H was flipping though our old burnt cookbook and commented that she would like to make something from it sometime. After a while she landed in the pie section and the lemon meringue pie recipe caught her eye. While looking through the recipe to see how feasible it would be (difficulty level, extra ingredients needed, that sort of thing), I noticed there was an orange meringue pie recipe as well. Since we have more than a dozen mature orange trees, and only two baby lemons, I suggested H use the orange meringue pie recipe instead. Might as well use the ingredients we naturally have on hand after all.

We cut into it while it was still warm, since H and I didn't want to wait to sample it. It firmed up really nicely after we stuck it back in the fridge and waited a few more hours. H did most of the work. I acted in a support capacity - finding ingredients and doing some stirring. I'd never made a meringue pie before, so for a first attempt we were very pleased with the result. It ended up pie shaped, and not just a gloppy disaster.

Next time H wants to make the crust thicker, use a little less sugar for the pie filling, and she might use chicken eggs to see if she can get a fluffier meringue.
